COCONUT RICE:
1 14 OZ OF COCONUT MILK
1 1/4 C WATER
3-6 TSP OF SUGAR
PINCH OF SALT
1 1/2 C JASMINE RICE
COMBINE FIRST 4 INGREDIENTS IN SAUCEPAN AND STIR TO DISSOLVE SUGAR.
ADD RICE.
BRING TO A BOIL OVER MEDIUM HEAT.
COVER, REDUCE HEAD AND SIMMER FOR 18-20 MINUTES UNTIL RICE IS TENDER.
GARNISH WITH TOASTED COCONUT.
